I know this day isn't here yet but I am planning a leap day dinner. Here is what we are going to have:
Frog legs (actually they will be chicken legs but we will call them frog legs)
Hoppin' John (I'm just going to use a recipe from the internet. It's black eyed peas cooked with ham or bacon)
Frog eye salad
Lettuce salad (rabbit food)
Bread (I haven't come up with a leaping bread recipe yet unless I do something with a "quick rise" name to it.
Grasshopper pie
Yummy! For seminary breakfast I'm thinking about doing Pop tarts. I couldn't think of anything that has to do with jumping or leaping so I figured popping would work.
Here's a recipe for frog eye salad
1 small package lemon instant pudding
1 20 oz. can crushed pineapple
1 15 oz. can fruit cocktail, undrained
1 small can mandarin oranges, drained
2 bananas, cut up
coolwhip
acini de pepe (small pasta) cooked, drained and rinsed.
Mix together all the ingredients and chill. I use sugar free pudding and light fruit and coolwhip.
Here is what I'm going to try for the grasshopper pie
1 chocolate graham cracker or oreo pie crust
2 small packages of vanilla or white chocolate instant pudding mixes (again I will be using sugar free)
3 cups milk (1% for me)
mint extract
green food coloring
chocolate syrup (sugar free for me)
Mix together the pudding mixes and the milk; add extract to taste and food coloring to desired color. Pour into pie crust and top with chocolate syrup.

I think I'm going to stir some cool whip into the pie also. I forgot to mention that.
Hee hee. I'll have to post the Leap Day Menu for our party once I put the invites together. Some items are similar. I plan on doing the frog eye salad, but instead of pasta I'm going to put in whole purple grapes. I don't think any kids will eat the pasta salad, plus I think the grapes staring out of the bowl will be hilarious. How do you do the chicken wings? I've never made those before and am tempted to have Ben pick some up from a restaurant on his way home.
